Prior to that date, he went through rich experiences in France (Apicius**, Pavillon Ledoyen***, Prince de Galles**), then in New-York in the famous and acclaimed Daniel Boulud**.
Chef Benjamin revisits classic French cuisine with sometimes unexpected twists.
He always highlights contrasting textures, flavours, and colours with his ingredients.
